Recipes

RSO has an excellent cookbook for sale during the first few weeks of school.  This book contains a variety of recipes that can be made with ingredients found on the island.  In the mean time, some of you will be in Dominica somewhat stuck for cooking ideas.  Here are some simple recipes to get you through the first few days until you get comfortable with the area and where to shop.  Thank you Kimi for these recipes.

1.  Pancakes

-2 cups milk, 3 eggs, 2 c flour, 1 tsp salt, 3 tsp baking powder, 1/3 c of oil.

Mix the eggs and milk.  Then add flour and baking powder.  Add oil.  Pour about 1/3 c of batter into a hot, greased frying pan.  Cook thoroughly on both sides

2. Flour Tortillas

-2 c flour, 1 tsp salt, 1/2 c of shortening, 1 cup of boiling water

- mix flour, salt, baking powder and shortening together in a mixing bowl.  Add the water to the mixture.  Take a small section and roll out thinly with a rolling pin.  In a hot, dry frying pan, place rolled shell and wait for it to poof up and flip round.  Great with cheese.

3. Fry bread

-2 c flour, 2 tsp baking powder, 1/4 c instant dry milk, 1/4 tsp salt, 1 c warm water.

Mix all dry ingredients well and then add water.  Cover bowl with plastic and let rise for at least 30 minutes but no more than 2 hours.  Divide (makes 5 0r 6 depending on the size), roll out on a flour surface.  You want to keep them a little thick so they poof up when you fry them.  Fry on each side then serve with taco meat, beans, tomatoe, onions, cheese, olives, etc.
